Ingredients: (Serves 4-6) 150g/5½ oz stale white bread, cut into cubes 400g/14oz tomatoes, chopped 1 red and 1 green pepper, chopped Bunch of scallions, sliced Handful of fresh parsley and basil, chopped 2 cloves garlic, finely chopped 2-3 tbsp red wine vinegar 5 tbsp olive oil 1 tbsp capers Salt, pepper Method: 1. Put the bread into a large bowl, add tomatoes, peppers, scallions, herbs and garlic. 2. Mix together vinegar, oil, capers, salt and pepper and pour the dressing into the bowl. 3. Stir well and refrigerate for about an hour before serving.
