Ingredients: (Serves 4) 500g/1 lb 2oz courgettes, diced 1 tbsp olive oil 3 large tomatoes, chopped 200g/7oz feta cheese, diced 1-2 tsp oregano Method: 1. Heat the oil in a pan, add courgettes and gently cook for 3-5 mins. 2. Add tomatoes and feta cheese, sprinkle with oregano and cook for another 2 mins. 3. Serve with some crusty white bread.
