Egg salad Print E-mail

Ingredients: (Serves 4-6)

6 eggs, hard-boiled

2 large tomatoes, diced

2 tbsp capers

2 scallions, sliced

1 tbsp white wine vinegar

2 tsp mustard

½ cup fresh cream

Salt, pepper, sugar

 

Method:

1. Cut the eggs into wedges and arrange on a serving plate together with tomatoes, capers and scallions.

2. To make the dressing mix together vinegar, mustard and cream. Season with salt, pepper and sugar.

3. Pour the dressing over the salad and serve.
