Ingredients: (Serves 6) 4 tbsp olive oil 3 pears, halved, cored and sliced 1 bag mixed salad leaves 80g/3 oz watercress 225g/8oz blue cheese, crumbled 2 tsp clear honey 2 tbsp white wine vinegar
Method: 1. Heat 1 tbsp oil in a large pan, add the pears and fry for 5 mins, stirring occasionally. Remove from the pan with a slotted spoon and put in a bowl. 2. Add the salad leaves and watercress to the bowl, toss together to mix and divide between 6 serving plates. Scatter over the blue cheese. 3. Add the remaining oil, honey and vinegar to the pan juices and heat gently, whisking. Drizzle over the salad and serve.
