Mashed potatoes with a twist |

Ingredients: 900g/2lb potatoes 6 tbsp milk 4 tbsp butter 50g/2oz chopped ham 1 red pepper, finely chopped 1 tbsp chopped parsley Salt, pepper Method: 1. Peel the potatoes, dice them and cook in a pan of salted water until very tender. Drain. 2. Mash the potatoes with milk and butter, then stir in the ham, pepper and parsley. 3. Season with salt and pepper and serve with roast chicken.
