Ingredients: 2 tbsp olive oil 450g/1 lb red peppers, cut into strips Medium curry powder Salt Method: 1. Heat the oil in a pan and fry the peppers for 2 mins, stirring continuously. 2. Sprinkle the peppers with curry powder, stir and fry for another minute. 3. Add a few tbsp of water, season with salt, cover and cook until the peppers are tender and there is no water left in the pan. 4. Serve as an accompaniment to fish.
