Mexican rice Print E-mail

Ingredients: (Serves 2)

1 tbsp olive oil

1 small onion, finely chopped

½ red pepper, finely diced

2 garlic cloves, crushed

1 cup rice

2 cups hot water

½ vegetable stock cube

2 tbsp ketchup

Salt, chilli powder

 

Method:

1. Heat the oil in a pan and fry onion and pepper for 3 mins.

2. Add garlic and fry for another minute.

3. Add rice and fry, stirring continuously, for another minute.

4. Dissolve the stock cube in 2 cups of water and pour in the pan.

5. Add ketchup, season with salt and chilli and bring to the boil.

6. Cover and simmer on a low heat for approx 20 mins until the rice is tender and all water has evaporated.
