Ingredients: (Serves 2) 4 large potatoes, quartered 8 tbsp water 4 tbsp olive oil 4 tbsp lemon juice 1 tbsp oregano ½ tbsp sea salt ¼ tsp pepper Method: 1. Preheat the oven to 220°C/fan 200°C. 2. Arrange the potatoes on a baking sheet. 3. Mix water, olive oil, lemon juice, oregano, salt and pepper and pour over the potatoes. 4. Mix well to coat all the potatoes and bake for approx 50 mins until the potatoes are tender. Turn them over a few times during the cooking time and add more water if necessary.
