Ingredients: (Serves 4) 2 cups long grain rice 2 tbsp oil 2 tsp curry powder 3 tbsp sultanas 100g/3½ oz tinned pineapple pieces Salt, pepper 100g/ 3½ oz almond slices Method: 1. Cook the rice in a pan of salted boiling water until tender. 2. Heat the oil in a pan, add curry powder and fry for a minute. 3. Add the boiled rice, sultanas and pineapple and stir well. 4. Fry for 2-3 mins, season with salt and pepper and transfer to a serving plate. 5. Sprinkle with sliced almonds and serve.
