Ingredients: (Serves 4) 1 kg/2 lb 3oz same size potatoes 50g/2oz butter, melted 1 tbsp dried breadcrumbs 50g/2oz grated cheese Salt, pepper Method: 1. Preheat the oven to 200°C/fan 180°C and grease a large baking sheet. 2. Wash the potatoes, arrange them on the baking sheet and slit each potato lengthways and across. 3. Season with salt and pepper and drizzle with melted butter. 4. Bake for 30 mins, then sprinkle with a mixture of grated cheese and breadcrumbs and bake for further 20 mins until soft.
