Sugar snap peas with lemon butter |

Ingredients: (Serves 4) 500g/1 lb 2oz sugar snap peas 2 tbsp butter Zest of 1 lemon 1-2 tbsp lemon juice Salt, pepper Pinch of sugar Method: 1. Melt the butter in a pan, and add half of the lemon zest. 2. Add peas and cook for 8-10 mins, stirring occasionally. 3. Add lemon juice and sugar, season with salt and pepper and serve sprinkled with the remaining lemon zest… Great accompaniment to fish.
