Ingredients: (Serves 4) 1 kg/2 lb 3½ oz potatoes, peeled and quartered 1 tbsp butter Few tbsp tinned peas, mashed 1 tbsp chopped parsley 1 clove garlic, crushed 250 - 300ml/9fl oz - ½pt milk Salt, pepper Method: 1. Cook the potatoes in a salted boiling water until tender; drain. 2. Mash the potatoes with 1 tbsp butter, then add the mashed peas, parsley and garlic. 3. Pour in some of the milk and using a hand blender beat the mixture, adding more milk, until light and fluffy. 4. Season to taste and serve.
