Spring spinach Print E-mail

Ingredients:

1 tbsp butter

1 onion, finely chopped

2 cloves garlic, crushed

500g/1 lb 2oz baby spinach, chopped

½ tsp salt, pinch of pepper

Pinch of nutmeg

1 tsp paprika

225g/8oz grated cheese

 

Method:

1. Melt the butter in a large pan, add onion and garlic and cook for 2-3 mins.

2. Add spinach and seasoning, cover and gently cook for 3-4 mins.

3. Preheat the oven to 200°C/fan 180°C and lightly grease an ovenproof dish.

4. Arrange half of the grated cheese on the bottom of the dish, cover with spinach and sprinkle with remaining cheese.

5. Bake in the preheated oven for 15-20 mins until golden.

6. Serve as a side dish or as a snack on top of bruschetta.
