Pea medley with lemon butter Print E-mail

Ingredients: (Serves 6)  
50g/2oz butter, softened
Finely grated zest of 1 lemon
1 tsp black pepper
200g/7oz mangetout
200g/7oz sugar snap peas
225g/8oz frozen peas

Method:
1. Place the butter, lemon zest and pepper in a small bowl, mix together to combine. Spoon onto a sheet of greaseproof paper; roll into a cylinder. Chill for at least 15 mins or overnight.
2. Bring a large pan of lightly salted water to the boil. Add mangetout, sugar snap and frozen peas, bring back to the boil and cook for 3 mins until just tender; drain.
3. Slice the lemon butter, add half to the hot peas and toss until melted. Serve topped with the remaining butter slices.
