Ingredients: Medium sized potatoes Oil Thyme Salt, pepper
Method: 1. Preheat the oven to 180°C and grease a baking tray. 2. Rinse the potatoes and lay them on a chopping board. With a sharp knife cut about 2/3 down through the potato, from one end to the other, taking care not to cut through, creating the look of a fan. 3. Lay the potatoes on the baking tray and drizzle with some oil. Season with salt and pepper, sprinkle with thyme and bake for 40 mins until golden.
