Ingredients: 4 courgettes, thinly sliced 2 tbsp butter 2 onions 2 cloves garlic 1/2 cup white wine 1 cup cream 2 tomatoes, peeled and cut into small cubes 1 tsp oregano salt, pepper 1 tbsp honey Method: Melt butter in a pan and saute onions and garlic. Add sliced courgettes and cook for a few minutes. Add wine and cream and boil until the sauce thickens. Reduce heat, cover and cook for 5 minutes. Add tomatoes and oregano to the pan, season with salt, pepper and honey, cover and cook further 5 minutes.
