Courgette & hot dog fritters Print E-mail

Ingredients:

400g/14oz courgettes

200g/8oz hot dogs

200g/7oz Eidam cheese (or white cheddar)

2 eggs

100g/3½oz sesame seeds

Salt

1 tsp dried parsley

1 clove garlic, crushed

Oil for frying

 

Method:

Grate the courgettes coarsely, put them in a colander, sprinkle some salt over them and leave for 10 minutes. In the meantime grate the cheese, peel the hot dogs and grate them coarsely as well. Squeeze any excess liquid out of the courgettes and mix them with cheese, hot dogs, eggs, garlic and parsley. Season with salt if needed and if the mixture is too thin add a little bit of cornflour. Take spoonfuls of the mixture and make little fritters. As soon as you put a spoonful in the pan, sprinkle sesame seeds on the top, fry for a few minutes, then turn and fry on the other side. Serve with potatoes or bread.
