Asparagus in a cheese batter Print E-mail

Ingredients: (Serves 4)  

300g/ 10½ oz asparagus

1 egg

60ml/2fl oz milk

60g/2oz flour

50g/2oz grated cheddar

Salt

Oil for frying

Sauce:

30g/1oz mustard

Egg yolks from 2 hard boiled eggs

Olive oil

Lemon juice

Chopped parsley

Salt, pepper

 

Method:

1. Peel the asparagus and cook in a pan of lightly salted boiling water until soft. (skip this step if you are using tinned asparagus)

2. Mix egg, milk and flour in a bowl and beat until smooth, then add cheddar.

3. Dip the asparagus into the cheese batter and fry in a hot oil until golden.

4. Mash the egg yolks with mustard, add oil and lemon juice to make a sauce, stir in the chopped parsley and season.

5. Arrange the fried asparagus on plates with some fresh vegetables, pour over the sauce and serve.
