Aubergine with goats cheese Print E-mail

Ingredients: (Serves 2-3)

1 aubergine (approx 250g/9oz), sliced

Salt, pepper

4 tomatoes, sliced

2 tbsp thyme

6 tbsp olive oil

200g/7oz goats cheese, sliced

 

Method:

1. Place the aubergine slices in a colander, sprinkle salt over them and leave to rest for 15 mins. Then rinse under running water and pat dry.

2. Preheat the oven to 210°C/fan 190°C.

3. Arrange the aubergine slices into an ovenproof dish, put tomato slices on them, season with salt and pepper and top with the goats cheese.

4. Mix the olive oil with thyme and drizzle over the cheese.

5. Bake in the preheated oven for 150 mins and serve with some crusty white bread.
