Ingredients: 55g/2oz plain flour Pinch of salt ¼ tsp baking powder 3 potatoes, cooked and mashed 15g/ ½oz butter, melted Oil for frying Method: 1. Sieve together flour, salt and baking powder. 2. Add the mashed potatoes and melted butter and bind together, using milk if necessary. 3. Turn onto a floured surface and knead until the mixture is smooth. 4. Divide in two equal parts, flatten each piece with your hand to form a circle and cut into 8 triangles. 5. Cook on a well-oiled hot pan until brown on both sides and serve with baked beans.
