Stuffed tomatoes with tuna Print E-mail

Ingredients: (Serves 4)

4 large tomatoes

1 small onion, finely chopped

150g/5½ oz tinned tuna, drained

4 olives, chopped

2 tbsp mayonnaise

1 tbsp chopped parsley

Salt, pepper

 

Method:

1. Preheat the oven to 200°C/fan 180°C.

2. Cut the tops off the tomatoes and spoon out the flesh.

3. Remove the seeds and finely chop the flesh, then mix with the onion, tuna, olives, mayonnaise, parsley, salt and pepper.

4. Fill the tomatoes with the tuna mixture and bake for 15 mins.

5. Serve with toast.
