Gardener’s toasts Print E-mail

Ingredients:

10 tomatoes

2 tsbp olive oil

2-3 onions, chopped

Bunch of fresh herbs (parsley, chives, basil etc.), chopped

1 tbsp dried oregano

150g/5½ oz grated cheddar

1 egg, beaten

Salt, pepper

Toast bread, sliced

 

Method:

1. Dip the tomatoes into a pan with boiling water for a few seconds, then peel and chop.

2. Heat the oil in a large pan, add onions and cook for 3-5 mins until soft.

3. Add tomatoes and dried oregano, season with salt and pepper, cover and gently cook until the liquid from tomatoes has evaporated. Leave to cool.

4. When the tomatoes have cooled down, add the beaten egg, cheese, fresh herbs and stir well.

5. Preheat the oven to 220°C/fan 200°C.

6. Spread the tomato mixture on the bread slices and bake in the preheated oven for 5-7 mins.
