Ingredients: (Serves 2) 4 eggs, beaten 1 tbsp oil ½ onion, finely chopped 2 scallions, sliced 2 rashers bacon, chopped 6 radishes, sliced 4 slices brown bread Salt, pepper, paprika Method: 1. Heat the oil in a pan, add onion and cook for 2-3 mins. 2. Add scallions, bacon and radishes and gently cook for 10 mins. 3. Season the eggs with salt and pepper and pour into the pan. Stir fry until the eggs are nearly set. 4. Toast the bread and divide the egg mixture on top of them. 5.Sprinkle with paprika and serve.
