Ingredients: (makes 20 stuffed mushrooms) 225g/8oz cream cheese 4-6 strips of bacon, finely chopped 1 small onion, finely chopped 20 large mushrooms, stems removed 8 mushroom stems, finely chopped Method: 1. Heat a non-stick pan and fry the bacon until crispy. Remove from the pan with slotted spoon and set aside. 2. Add onion and mushroom stems to the pan and cook until tender. Drain off excess fat. 3. Mix the crispy bacon, onion and stems with cream cheese and stuff the mushrooms. 4. Bake at 210°C/fan 190°C for 10-15 minutes.
