Ingredients: 6 eggs, beaten 100g/3½ oz ham, chopped 100g/3½ oz grated cheese 200g/7oz cooked fusilli pasta, chopped 1 tbsp chopped parsley Salt, pepper Oil for frying
Method: 1. Mix the beaten eggs with 4 tbsp grated cheese, season with salt and pepper. 2. Stir in the ham, cooked pasta and parsley. 3. Heat the oil in a frying pan and spoon the mixture into the pan to make fritters (about three at a time). Flatten with the back of a spoon and fry for a few minutes each side until crispy. 4. Sprinkle with the rest of the cheese while still hot and serve with some green salad.
