Spicy egg sandwich filler |

Ingredients: 2 eggs, hard-boiled 2 medium gherkins, finely chopped 2 anchovies, finely chopped 1 tbsp capers ½ small onion, finely chopped 1 tsp mustard 125g/4½ oz cream cheese 2 tbsp crème fraîche Salt, pepper
Method: 1. Peel the eggs and cut in half. Put the egg yolks into a small bowl and finely chop the egg whites. 2. Mash the egg yolks with mustard, add cream cheese and crème fraîche. 3. Add egg whites, gherkins, anchovies, capers and onion and stir to combine. Season with salt and pepper. Tastes great on crusty brown bread.
