Eggs on bread Print E-mail

Ingredients: (Serves 1)  
1 tsp oil
1 large slice of onion, chopped
1 thick slice of red pepper, chopped
2 eggs, lightly beaten
1 thick slice of cheddar, cut into cubes
Salt
Paprika to sprinkle
2 slices of brown bread to serve

Method:
1. Heat the oil in a small pan, add onion and fry for a minute, stirring.
2. Add pepper and fry for another minute, stirring.
3. Turn down the heat, add eggs, then stir until cooked (same as if making scrambled eggs). Season with salt.
4. When the eggs have the desired consistency (I like my scrambled eggs a little runny) add cheese and stir for a few seconds until the cheese starts to melt but still holds its shape.
5. Toast the bread and top with the eggs, sprinkle with paprika and serve.

* For a more luxurious version you can add bits of bacon or ham when frying the onion during step 1 *
