Bean and egg breakfast pan Print E-mail

Ingredients: (Serves 2) 
1 tbsp oil
½ onion, finely chopped
2 hot dogs, cut into bite sized pieces
1 tomato, chopped
1 tin baked beans
2-4 eggs
Salt, pepper

Method:
1. Heat the oil in a large frying pan, add onion and gently fry for 3 mins.
2. Add hot dogs and fry for further 3 mins.
3. Add tomato and fry for another minute.
4. Pour in the beans and stir well.
5. Crack an egg into a small cup and pushing the mixture from the bottom of the pan with the back of a spoon pour the egg to the pan. Repeat with the other eggs, then season them with salt and pepper.
6. Gently cook for a few minutes until the bottom of the eggs are cooked, then finish under a hot grill until the eggs are set. Serve with crusty bread.
