Scrambled eggs with mushrooms Print E-mail

Ingredients: (Serves 2)  
2 tbsp oil
½ onion, chopped
10 mushrooms, halved and sliced
4 eggs, lightly beaten
Handful of grated cheddar
Salt, pepper

Method:
1. Heat the oil in a pan, add onion and fry for 2 mins, then add the mushrooms and fry for another 5 mins, stirring occasionally, until golden.
2. Season the eggs with salt and pepper and add to the pan, stirring all the time, until they’re the consistency you like them.
3. Stir in the grated cheddar and serve on top of toast or with crusty bread as part of your brunch.
