Baked Florentine ham Print E-mail

Ingredients: (Serves 2)

4 thick slices of ham

4 large eggs

4 tbsp fresh cream

2 handfuls spinach leaves

50g/2oz grated cheddar

Salt, pepper

 

Method:

Put the spinach leaves into a colander, pour some hot water over them and drain. Preheat the oven to 220°C/fan 200°C. Take two small shallow ovenproof dishes and divide the ham between them, put spinach leaves on the ham, season with salt and pepper, break the eggs into the dishes and pour the cream on top. Sprinkle with cheese and bake for 8-10 mins until the eggs are set and cheese is bubbling. Serve with some fresh baguettes.
