Ingredients: (makes 4 toasts) 2 cups cooked cauliflower 3-4 tbsp mayonnaise 1 tbsp mustard Salt, pepper 4 slices brown bread To garnish: salad leaves, grated carrot Method: 1. Put the cooked cauliflower in a food processor and blend until smooth. 2. Add mayonnaise and mustard and season with salt and pepper. 3. Lightly toast the slices of bread and spread the cauliflower mixture on top of them. 4. Put under a hot grill for a minute or two, then garnish with salad leaves and grated carrot and serve.
