Winter lentil soup with crème fraîche Print E-mail

Ingredients: (Serves 4) 

2 tbsp oil

2 onions, finely chopped

10cm/4in piece of chorizo sausage, sliced

2 tbsp flour

2 litres/3½ pts water

2 vegetable stock cubes

200g/7oz green lentils

2 tsp dried marjoram

2 tsp paprika

2 cloves garlic, crushed

Salt

Crème fraîche to serve

 

Method:

1. Heat the oil in a large pan, add onions and fry for 3-4 mins. Then add chorizo slices and fry for another 3-4 mins.

2. Add flour, stir well and pour in the water.

3. Add stock cubes, lentils, marjoram, paprika and garlic, bring to the boil and simmer for approx 30 mins until the lentils are tender.

4. Season to taste and serve with a dollop of crème fraîche.
