Green lentil & vegetable soup |

Ingredients: (Serves 4)  1 leek, sliced 1 tbsp butter 2 large carrots, chopped 1 parsnip, chopped 1.5 litres/2⅓ pts water 200g/7oz green lentils 1 vegetable stock cube 1 tbsp chopped parsley Salt, pepper Method: 1. Melt the butter in a pan, add leeks and gently cook for 2 mins. 2. Add carrots, parsnip, water, lentils and stock cube, bring to the boil and simmer for 40-50 mins until the lentils are tender. 3. Add parsley, season with salt and pepper and serve with fresh bread.
