Ingredients: (Serves 4) 1 onion, chopped 1 tbsp oil 500g/1 lb 2oz carrots, chopped 2 large potatoes, chopped Water, chicken stock cube Salt, pepper Fresh cream or yoghurt Method: 1. Heat the oil in a pan, add onion and cook for 2-3 mins. 2. Add carrots and potatoes and pour in enough water to cover the vegetables. 3. Add stock cube, bring to the boil and simmer until the vegetables are tender, then blend (add more water if required). 4. Season with salt and pepper and serve with dollop of cream or yoghurt.
