Italian bean and pasta soup |

Ingredients: (Serves 4)
1 onion, finely chopped
1 tbsp olive oil
2 slices of pancetta (or streaky bacon), chopped
1.2 litres/2 pts water
2 x 400g tins of baked beans in tomato sauce
1 vegetable stock cube
Handful of small pasta shapes
2 tbsp chopped parsley
Salt, pepper
Method:
1. Heat the oil in a pan, add onion and bacon and fry for 2-3 mins, stirring constinuously.
2. Add water, beans (undrained), stock cube and pasta. Bring to the boil, cover and cook for 15-20 mins.
3. Add parsley, season with salt and pepper and serve.
