Ingredients: (Serves 4)  2 tbsp butter 2 leeks, sliced 4 cloves garlic, crushed 1 litre/1¾ pts water 500ml/18 fl oz milk 4 potatoes, diced 2 vegetable stock cubes Salt, pepper Method: 1. Melt the butter in a pan, add leeks and gently cook for 3 mins. 2. Add garlic and cook for another minute. 3. Pour in the water and milk, add potatoes and stock cubes, cover, bring to the boil and simmer for 20-25 mins. 4. Season with salt and pepper and serve.
