Ingredients: (Serves 4)  2-3 tbsp oil 1 onion, finely chopped 1 carrot, finely chopped 1 clove garlic, crushed 1 stalk celery, finely chopped 2 tins peas, drained 1.5 litres/2⅓ pts vegetable stock Salt, pepper Method: 1. Heat the oil in a pan, add onion, carrot, garlic and celery and gently cook for about 5 mins. 2. Add peas and stock, bring to the boil, cover and simmer for 30 mins. 3. Blend until smooth, season to taste and serve.
