Vegetable soup with meatballs Print E-mail

Ingredients: (Serves 4)  

2 tbsp butter

1 leek, sliced

1 large carrot, coarsely grated

1.5 l / 2½ pts water

½ vegetable stock cube

75g/2½ oz minced pork

3 cream crackers, crushed

1 egg

1 tsp mixed herbs

Salt, pepper

 

Method:

1. Melt the butter in a large pan, add leek and carrot and cook gently for 5 mins.

2. In the meantime mix together minced pork, crushed cream crackers, egg, mixed herbs and salt and shape the mixture into small meatballs.

3. Add water and stock cube into the pan, bring to the boil, add meatballs and simmer, covered, for 15-20 mins. Season to taste and serve.
