Ingredients: (Serves 3)
1 tbsp olive oil ½ onion, finely chopped 1 large clove garlic, crushed 250g/9oz frozen spinach 900ml/1½ pt water 1 tsp dried basil 1 tsp dried oregano 1 tsp dried marjoram 50g/2oz small pasta shapes Salt, pepper Grated cheese to serve Method: 1. Heat the oil in a pan, add onion and cook for 2-3 mins. Add garlic and cook for another minute. 2. Add frozen spinach, water, herbs and pasta and season well with salt and pepper. 3. Bring to the boil and simmer for 10 mins. 4. Serve sprinkled with grated cheese.
