Potato & red lentil soup Print E-mail

Ingredients: (Serves 3)  
1 small onion, finely chopped
1 tbsp olive oil
100g/3½ oz red split lentils
200g/7oz potatoes, peeled and chopped
750ml/1¼ pt water
1 vegetable stock cube
½ tsp dried coriander
1 tbsp chopped parsley
Salt, pepper

Method:
1. Heat the oil in a pan, add onion and gently cook for 5 mins until soft but not browned.
2. Add lentils, potatoes, water, stock cube, coriander, cover and simmer for 15-20 mins until the veg is cooked.
3. Blitz with a hand blender until smooth, add parsley and season to taste.
