Ingredients: (Serves 2-3) 1 tbsp butter 1 small onion, chopped 2 small carrots, chopped 2 medium potatoes, chopped 250g/9oz frozen peas 1 clove garlic, crushed 600ml/1pt water ½ vegetable stock cube Splash of milk Salt, pepper
Method: 1. Melt the butter in a pan, add onion and cook gently for 3-5 mins. 2. Add carrots, potatoes, peas and garlic, pour in the water with the stock cube, cover and cook until all the vegetables are tender. 3. Blend the soup with a hand blender and add a splash of milk (depending how thick you want the soup). Season to taste and serve with bread.
