Ingredients: (Serves 2-3) 1 small onion, chopped 1 tbsp oil 1 large carrot, chopped 1 large parsnip, chopped 1 inch slice of turnip, chopped 2 medium potatoes, chopped 600ml/1 pt water 1 vegetable stock cube Dash of milk Salt, pepper
Method: 1. Heat the oil in a pan, add onion and gently cook for 3-4 mins. 2. Add vegetables, water and stock cube, cover and cook until the vegetables are tender. 3. Blend the soup, add a little milk to thin it out a bit, season to taste and serve with bread.
