Frankfurter soup Print E-mail

Ingredients: (Serves 4)  
½ onion
1 tbsp oil + 1 tbsp butter
4 tbsp plain flour
1.5 litres/2½ pts boiling water
1 large carrot, chopped
1 small parsnip, chopped
1 beef stock cube
1 tbsp paprika
2 medium potatoes, chopped
2 frankfurter sausages (hot dogs), sliced
Salt, pepper

Method:
1. Heat the oil and butter in a pan and gently fry the onion for 3-5 mins.
2. Add flour, stir well and then gradually pour in the water, stirring with a whisk.
3. Add carrot, parsnip, stock cube, paprika, salt and pepper and cook for 10 mins.
4. Add potatoes and frankfurters and cook for another 15 mins, stirring occasionally to prevent the soup from sticking to the bottom of the pan.
