Ingredients: (Serves 4) 1 tsp oil 1 onion, finely chopped 10 mushrooms, chopped 50g/2oz flour 2 stock cubes 575ml/1 pt water 425ml/ ¾ pt milk Salt, pepper Method: Heat the oil in a saucepan, add the onion and mushrooms and fry, stirring continuously for 5mins. Add the flour, stir well and cook for another 2mins. Gradually stir in the water and milk, add the stock cubes and bring to the boil. Simmer for 20 mins, stirring occasionally, season to taste and serve.
