Ingredients: (Serves 4) 3 carrots, peeled and diced 1 parsnip, peeled and diced 1 turnip, peeled and diced 2 leeks, chopped 1 onion, chopped 8 mushrooms, sliced 1 tsp oil 50g/2oz flour 150ml/ ¼ pt milk 1 litre/ 1¾ pts water 2 chicken stock cubes Salt, pepper Method: Heat the oil in a large saucepan and gently fry onion and mushrooms. Stir in the flour and gradually pour in the milk. Add water, stock cubes, carrots, turnip, parsnip and leeks and bring to boil. Cover and simmer for about 45 mins. Season to taste with salt and pepper and serve.
