Ingredients: (Serves 4) 3 tbsp olive oil 1 onion, finely chopped 1 leek, sliced 300g/10½ oz potatoes, peeled and diced 2 cloves garlic, crushed 850ml/ 1½ pt water 300ml/ ½ pt milk 1 vegetable stock cube Salt, pepper Method: 1. Heat the oil in a saucepan, add onion and leek and fry for 2 mins. 2. Add potatoes and garlic and fry for another 2 mins, stirring continuously. 3. Pour in the water and milk, add stock cube and bring to boil. Cover and cook on a medium heat for 20mins. 4. Transfer to a food processor and blend until smooth. Season with salt and pepper and serve.
