Ingredients: (Serves 4)
2 tbsp olive oil
2 onions, finely chopped
2 cloves garlic, crushed
2x 400g cans tomatoes
175g/6oz red split lentils
2 litres water
1 vegetable stock cube
2 tsp paprika
2 tsp ground coriander
Pinch of ground cumin
Handful fresh parsley, chopped
Salt, pepper
Method:
1. Heat oil in a saucepan, add onions and garlic and cook gently for few minutes.
2. Stir in undrained tomatoes, lentils, water, stock cube and spices.
3. Bring to a boil, cover and cook for 40 mins.
4. Blend the soup with a hand blender, add parsley, season to taste and serve.
