Ingredients: (Serves 4)
225g/8oz broccoli florets 2 x 500g /1 lb 2 oz packs gnocchi 25g/1oz butter 2 tsp olive oil 250g/9oz mushrooms 2 cloves garlic, crushed 4 sun-dried tomatoes, cut into thin strips 300ml/ ½pt sour cream 3 tbsp dried breadcrumbs 75g/3oz grated cheese Salt, pepper Method: 1. Preheat the oven to 200°C/fan 180°C. 2. Cook the broccoli florets in a pan of boiling, lightly salty water for 2 mins. Drain well. 3. Cook the gnocchi according to the packet instructions. 4. Heat the butter and oil in a large frying pan, add mushrooms and garlic and fry for 4-5 mins until golden. 5. Transfer the gnocchi, broccoli, mushroom mixture and tomatoes to a shallow ovenproof dish. 6. Season with salt and pepper and drizzle over the sour cream. 7. Mix together breadcrumbs and cheese, sprinkle over the top and bake for 20-25 mins until golden.
