Ingredients: (Serves 4) 900g/2 lbs vegetables (potatoes, carrots, onions, turnips, peas, lentils etc.) Salt, pepper 575ml/ 1pt vegetable stock Method: 1. Preheat the oven to 190°C/fan 170°C. 2. Slice potatoes and put a layer on the bottom of a casserole dish. 3. Layer vegetables over the potatoes and keep layering until the dish is full. Season between the layers. 4. Finish with a layer of potatoes. 5. Add vegetable stock, cover and bake for 1.5 hours.
