Ingredients: (Serves 4) 500g/1 lb 2oz broccoli, cut into florets 300g/10½ oz courgettes, sliced 2 red peppers, cut into strips 3 carrots, coarsely grated 125ml/ 4½fl oz vegetable stock 250ml/9fl oz sour cream 100g/3½ oz grated cheddar Method: 1. Preheat the oven to 200°C/fan 180°C and grease a shallow ovenproof dish. 2. Put the broccoli, courgettes and peppers into the dish and mix, then top with the grated carrots. 3. Mix the stock with the sour cream and pour into the dish. 4. Bake for 20 mins, then sprinkle the cheese on top and bake for another 20 mins until golden.
